My Mother's Meat Pie

The above recipe was written by Claire Jury Cranford as she lay dying of cancer, she passed away in late April and this writing is a treasure to me. You see, she was half blind at the time and struggled to get the recipe written down for me. She did this for me since I loved her meat pie and had never had tried to make it myself and had no clue how to begin. She also wrote it in order for it to be published in a Church Recipe book for our neighbor's fund raiser for her church. Several of my mother's recipes were published in that book. Claire's mother, Julia Swift Jury was the source of this meal and handed it down to Claire who handed it down to her children. My mother said that when she was a child in upstate New York, she would come home from school, climb off the bus and smell that meat pie of her mother's cooking, all the way to the street in the cold winter air. She would rush inside and ask "how much longer, Ma?" Now my daughter, Sara, does the same to me, and I smile when I hear her say, "How much longer, Mama?" I hope that she too will treasure this recipe as I do. It sits in a frame in my mother's kitchen for all to see and remember those days when she stood at the stove, making the house smell wonderful. 1 pd hamburger, 1 onion cut up small, samll bag baby carrots cut up, 5 pds potatoes cubed, salt & pepper to taste, 1 can drained green beans, 1/2 can beef broth optional. Brown hamburger & onions, pour off grease. Add all ingrediants, cover with water and cook until tender. Roll out on wax paper, pastry dough for a 9 x13 pan- put all cooked ingrediants in shell (sic. pastry shell) with liquid. Cover with rest of pie shell. 350 degree in oven about 45 min until pastry is done. ~ 2003 Cathy Cranford
