Grandma Cranford's No Bake Cookies (Lillian Jordan Cranford Lewis)

The above recipe was written by myself when I was just a young child. Please excuse my spelling errors! The recipe was my grandmother, Lillian Jordan Cranford Lewis' recipe. She would often make these wonderful cookies when my family would come to visit her in Charlotte, NC. I could not wait to get there and drove my family nuts with saying over and over, "How much farther until we get there?" I would rush into her kitchen to see if a plate of them would be laying on her kitchen table. I begged for my mother, Claire, to get the recipe and she did. We did not get them often as children but when we got them, they were the best cookies ever. My mother's notations are on the side where she doubled the recipe. My mother, Claire, used smooth peanut butter instead of chunky. I liked them either way. I make these cookies each year at Christmas in honor of my Grandmother and usually give a batch to my brother for a gift. My children love these cookies as does the rest of my family. I loved my grandmother very much and these cookies bring back warm memories of her and her kitchen. She was a strong woman who raised her 6 children alone. She did it, and did it well. I am very proud of my grandmother and she was/is an inspiration to me as I too, am raising my children alone. She was a fine lady could sew almost anything you could imagine. She was the only grandmother I ever knew as my maternal grandmother passed early in my life, and I loved her dearly. She passed away in 1977 and I miss her. I hope you enjoy these cookies as much as my family does. On the back of the page, are two more steps, 5. Stir Well and 6. Drop by teaspoons unto waxpaper and allow to cool. Hints: You must allow the mixture to come to a rapid boil or else the cookies will not set properly. Still tastes great even if they don't set, abit messy but still good. Also stir well while cooking to avoid sticking to the bottom of the pan. ~ 2003 Cathy Cranford
