Recently someone asked a question about Bethiah Hopkins, and I accidently deleted the reference.  I don't remember the question, but I have a document that I will pass along that was copied for me by a cousin, which he obtained from the Hopkins Historical Society in Hopkins, MN.  The "Donor" was George Winter and the document is D 710.0.  It is a typed transcription of what appears may have been bible records.  It mentions Bethiah Hopkins, and for whatever it's worth, I will include it here.  It is a long shot, but perhaps worth pursuing.

Wife to Jabish Hopkins.  Died March the 15th day in the year of our
Lord 1781.  Aged 66 years  and 9 days when she died.

Deborah Hopkins born March 7th day in the year of our Lord 1691.
Died on April the 11th day in the year of our Lord 1781.  Aged 90
years and    month and 4 days.
Gabish(sic) Hopkins died July the first day 197_.  Wanted 15 days of being
78 years old when she(sic) died.
Tabitha Hopkins born June the 27th day 1775.  Died October the 3rd day 1793.
Aged 18 years 3 month and 6 days old when she died.
Elizabeth Hopkins wife to Isaac Hopkins born July the 16 day 1751.  Died
June the 26th day of 1802.  Wanted 20 days of being 51 years old when she died.
Abigail Hopkins second wife to Isaac Hopkins   Born August the 4th A.D. 1758.
Died September the 8th day A.D. 1814.  Was fifty six years one month
and 4 days old when she died.
