Potato Candy

Peel and boil one white potato 
Mash potato with a lump of butter and potato masher
Add a blob of peanut butter to mashed potato - (heaping tablespoon)
Add confectioner's sugar till mixture stiffens -  (est. 2 pounds)
Roll out like pie crust, spread with ground cinnamon then roll into a log and slice into 1/4" slices.
